Because of the high temperatures and small size, it's easy to burn the kernels if you're not super on top of it. You gotta constantly be shaking them to make sure they all fall to the bottom and get consistent heating.
It likes high temperatures, and a VERY specific moisture content. And at least 10% of it stays unpopped no matter what you do.
Popcorn ain't nearly as difficult as sorghum. That stuff's so fussy.
